A healthy and portable snack or breakfast-on-the-go, your entire family will love these light and fruity Baked Strawberry Oatmeal Singles!!

They are great either way, fresh out of the oven, re-heated or even cold!


INGREDIENTS

2 cups
 gluten free Old fashioned oats

  •       


1/2 cup 
Apn Vanilla or Strawberry Protein powder

  •       


1/4 cup
 Truvia

  •       


2 tsp 
Baking powder

  •       


1/4 tsp 
Salt

  •       


1 
Large egg white

  •

Large egg

1 cup
 Unsweetened almond milk or flax milk

  •       


2 
Medium bananas (about 2/3 cup mashed)

  •       


1/2 tsp
 Vanilla extract

  •       


3/4 cup 
Diced fresh strawberries


DIRECTIONS

Preheat oven to 350 degrees. Spray a 12 cup muffin tin with cooking spray.

Combine the oats, sweetener, baking powder and salt in a large bowl and stir until thoroughly mixed.

Add the rest of the wet ingredients to the bowl and stir until everything is mixed together. Gently stir in the strawberries.

Divide the oatmeal mixture evenly between the prepared muffin cups. Bake uncovered for 25-28 minutes or until oatmeal is lightly browned.
