I absolutely love the sweetness of beets mixed with fresh avocado, feta and some chopped up chicken! Throw in a little pepita’s and YUM!


INGREDIENTS

  • 4 oz. raw boneless skinless chicken breast

  • Dash garlic powder

  • Dash onion powder

  • Dash each salt and black pepper

  • 3 cups roughly chopped red leaf lettuce

  • 1/3 cup chopped cooked beets (previously canned/packaged and drained)

  • 2 tbsp. crumbled reduced-fat feta cheese

  • 1/4 oz. (about 2 tbsp.) pepita seed

  • 2 oz avocado

  • ½ cup Bolthouse balsamic vinaigrette


DIRECTIONS

Air fry or oven bake at 375.

Place chicken in the oven and bake for 25 min

Meanwhile, place lettuce in a large bowl, add all the ingredients and then chop up the chicken and place it on top.

Dig in!
