GREEK ZOODLE SALAD

This is a great side dish or add some protein on top for a main meal! Super light and refreshing for when it’s hot outside!


INGREDIENTS

  • 2 - 3 medium zucchini

  • 1 cup cherry tomatoes, cut in half

  • 1/2 cup chopped red onion

  • 1/2 cup reduced-fat or vegan feta cheese

  • 1/4 cup black olives, sliced

  • 1/3 cup low fat Italian dressing


DIRECTIONS

Using a spiral vegetable slicer, cut zucchini into spaghetti-like noodles. (Or you can buy them at the store.) Roughly chop for shorter noodles.

Place zucchini noodles in a large bowl. Add all ingredients except dressing, and mix.

Add dressing, and stir thoroughly.

Cover and refrigerate 1 hour, or until chilled.

Dig in!
