PEANUTTY OREO MUFFINS

Who doesn’t love the taste of chocolate and peanut butter together? Why not step it up and mix In some oreos with peanut butter!!! Oh my these are delicious! I used reduced fat peanut butter to reduce the fat intake a bit?


INGREDIENTS

  • 1 cup gluten free flour

  • 1/2 cup cocoa powder

  • 1/2 cup truvia

  • 2 tsp baking powder

  • 3/4 cup unsweetened oat milk

  • 1 tbsp canola oil

  • 2 tbsp unsweetened applesauce

  • 24 plant based back to nature oreo cookies

  • 1/2 cup reduced fat peanut butter


DIRECTIONS

First make the vegan chocolate muffin batter. In a bowl, combine all ingredients and stir with a spoon until well combined.

Spray a muffin tin with pam spray.

Then make the Plant based Oreo peanut butter stacks that go inside of the muffins. You need two Plant based Oreo cookies for each muffin. Put some peanut butter on the first Oreo, put the second on top, and again spread some peanut butter on top of it. Put one stack in each muffin tin.

Add the batter on top of each stack (about 3 tablespoons for each muffin). Make sure you get it down the side of the Oreo stacks.

Preheat the oven to 350 °F and bake for 18 minutes. Dig in!
