PUMPKIN PIE GREEK YOGURT

This little breakfast dish is great for those who are just not big breakfast eaters! It is super light but so full of yumminess that you want to eat the entire bowl!


INGREDIENTS

  •       1 cup Plain nonfat Greek yogurt

          1/2 cup Pumpkin puree

          2 tbsp Low sugar maple syrup

          2 tbsp Peanut flour (could also use Apn protein powder)

          1/2 tsp Pumpkin pie spice

          1/2 tsp Cinnamon

          1-2 tbsp Sweetener of choice (optional)

                        


DIRECTIONS

In a medium bowl, combine all ingredients except bread. Whisk with a fork until uniform.
Cut bread into 1-inch-wide strips. Coat with egg mixture.
Bring a large skillet sprayed with pam spray to medium-high heat.

Cook about 2-3 min per side, should be golden brown!

Optional toppings: sugar-free pancake syrup, pb 2, truvia confectioners sugar. Dig in!
