There is nothing better than finding a healthier version of a dish that you love and this Cauliflower Fried Rice with Shrimp is exactly that! Made with juicy shrimp, low carb cauliflower rice, ginger, garlic, and plenty of vegetables, this is a dish you will make again and again.


Ingredients

·       2 Eggs

·       ½ Onion chopped

·       1 tbsp Minced garlic

·       3/4 cup Frozen diced carrots or fresh

·       3/4 cup Frozen peas or low sodium canned

·       12 oz medium or large shrimp

·       2 cups Cauliflower rice

·       2 chopped Green onions

·       3 tbsp low sodium Soy sauce


DIRECTIONS

Spray a large non-stick skillet with cooking spray and heat over medium heat. Add in the eggs and cook for a few minutes. Break the eggs apart into small pieces. Remove from the pan and set aside.

Re-spray the pan with cooking spray, and add in the chopped onion and 1/4 cup water, cook for a few minutes, until the onions are tender and translucent. Add in the garlic and sauté for a minute or two longer, or until the onions and garlic are lightly golden brown. 

Add carrot/pea blend. Stir in with onions/garlic. Toss in shrimp and stir-fry for a few minutes, or until the shrimp is cooked through and the veggies are just starting to get tender.

Cauliflower Rice: Prepare the cauliflower rice according to package Set aside.

To the pan, add in cooked cauliflower rice (and green onions if desired). Add soy sauce to the pan. Stir in and mix thoroughly. Add the cooked scrambled egg. Stir again and mix well. When everything is just about heated through, remove the fried rice from the heat and serve warm.
