COOKIE DOUGH FREEZER BITES

I decided yesterday to try my hand at making my own cookie dough bites. On my first attempt, I nailed it. I came up with this recipe, but I’m sure that there are similar recipes on the internet that produce nearly the same result: yet not as healthy. I don’t know why I haven’t tried this before, because my kids are cookie addicts and I’ve been known to have a freezer of frozen cookie dough. Frozen cookie dough has a luster all its own, and for those that haven’t tried it, now is your time!

 

I think what I like most about these freezer cookie dough bites is their versatility. Sometimes all I need after dinner is a quick little bite of something sweet, and I have a feeling that if I can just reach into the freezer for a healthier treat, I can get away with just eating one. INGREDIENTS

1 3/4 cup 
Oat flour

  •       


1/2 cup 
Protein powder (I like Planta Madagascar Vanilla)

  •       


1/4 tsp
 Salt

  •       1/4 cup 
Baking stevia

  •       


1/3 cup
 Reduced Fat peanut butter

  •       


1/2 cup
 unsweetened applesauce

  •       


1/4 cup
 Low sugar maple syrup (or honey)

  •       1/2 tsp
 Vanilla extract

  •       


1/4 tsp
 Almond extract (optional)

  •       


1/4 tsp 
Butter extract (optional)

  •       1/4 cup 
Mini chocolate chips (dairy free for vegan)


DIRECTIONS

Take your peanut butter and melt it slightly in the microwave for 20-30 seconds. In a medium bowl, mix peanut butter and everything else together until it is well combined. (Chill dough in fridge for about 15 minutes to make handling easier if desired.)

        

Remove from fridge after dough has chilled and roll into 22 even size balls. Place in a single layer in a container and cover with lid. Freeze until set, at least 4-6 hours, or overnight. Whenever you want to enjoy, simply pull out the the freezer and eat!
