I could literally eat this every day of the week! So simple and refreshing! I love not having a heavy dressing on my salad as I feel it drowns out the flavors of the veggies!

Add the feta, olives and lemon and its just the right amount of flavor to please any salad lover!


INGREDIENTS

  • 3 cups romaine

  • 1/2 cup Kalamata olives

·       12 cherry tomatoes, halved

·       1 cucumber, diced

·       1/2 cup parsley, chopped

·       juice from 1 lemon

·       6 tablespoons feta crumble

·       sea salt & pepper to taste


DIRECTIONS

 1.     Mix all the ingredients together and season to taste with lemon and sea salt & pepper.
