VEGAN PUMPKIN PIE DONUT

I love when I am able to still have “treats'“ made healthier! These delicious donuts are gluten free and dairy free if using a flax egg and Vegan!

Super healthy and what a way to start your morning with a donut and coffee!


INGREDIENTS

  • 3/4 cup gluten free Oat flour (take gluten free oats and blend them up)

  • 1 tsp Baking powder

  • 1/4 tsp Salt

  • 1/2 tsp Pumpkin pie spice

  • 1/2 tsp Cinnamon

  • 1/4 cup monkfruit or truvia

  • 1 Egg or 1 tbsp ground flax meal + 2 tbsp water let sit for 5 min

  • 1/4 cup Almond milk

  • 1/4 cup unsweetened Applesauce

  • 1/4 cup Pumpkin

  • Cinnamon & Sugar Coating: (optional)

  • 1 tbsp Cinnamon

  • 2 tbsp monkfruit or truvia

  • 2 tbsp almond milk


DIRECTIONS

Preheat oven to 350 degrees. Spray a donut pan with Pam cooking spray.

In a medium size bowl, mix together the dry ingredients. In a separate bowl, mix together the wet ingredients. Combine the wet ingredients and the dry, and mix until batter is smooth and no longer lumpy.

Divide batter evenly between the 6 donut molds. Bake for 12-15 minutes, or till springy to the touch, and donuts are set.

Combine cinnamon, almond milk and sweetener in a small bowl. Take a spoon or spatula and smooth the cinnamon mixture evenly over donuts. Dig in!
